Menu Plan Monday

We had quite an Easter dinner feast yesterday!  Hope anyone else celebrating had a great dinner as well.  Here is my menu plan for the week including the easiest corned beef, cabbage and potatoe recipe ever!!

Sunday- Easter Dinner (Ham with dijon mustard glaze, mashed potatoes, corn pudding, green bean casserole, rolls and homemade cheesecake)

Monday- leftovers from Easter dinner

Tuesday- Corned Beef, Cabbage and Potatoes, bread and butter

Wednesday- Philly Cheesesteak Wraps, french fries, lima beans

Thursday- Baked Chicken Fingers, macaroni and cheese, stewed tomatoes

Friday- Spaghetti with turkey meatballs, garlic bread

Saturday- Pork Stew and biscuits

Quick and Easy Corned Beef, Cabbage and Potatoes

Bet you won’t find an easier recipe, literally three ingredients plus water!  And easy on the budget as well.

1 Large Head of cabbage

abt. 15 small red potatoes

1 can corned beef

Slice potatoes after washing them. Place in a large soup pan with 1/4- 1/2 cup water.  Bring to a boil.  Cover and reduce heat.  Cook for ten minutes.  Meanwhile, cut cabbage into large bite sized chunks.  Add to the potatoes.  Stir together and replace the lid.  Cook until potatoes are tender (usually 1/2 hour).  Before serving add the corned beef, stir and heat through. Serve in bowls.

  1. Melissa I have an easy made from scratch version of Corned Beef, which we call Boiled Dinner.

    Buy 1 package corned beef, head of cabbage, potatoes, baby carrots.
    Fill large pot of water 2/3 full. Add corned beef. Cook for about 2 hours. Add peeled/cut up potatoes & carrots. Cook for about 30-45 min. Add some cut up cabbage leaves. Cook for 15 min. Eat. We like it simple in our house!
