Easy Dinner and a healthy menu plan

Menu planning is just as important during the summer, maybe even more so!  If your kids are home you need to plan for three meals a day and stretch your food budget.  Here is my menu for the week:

Monday:  Turkey Tacos

Tuesday:  Out for our 13th anniversary

Wednesday:  Penne with Sausage and Veggies (recipe below)

Thursday: Corn and Crab Chowder, cornbread

Friday: Chili and salad

Saturday: Pork Chops and homemade sauerkraut

Sunday: Spaghetti dinner fundraiser

Penne with Sausage and Mixed Veggies

4 C. whole wheat penne pasta, uncooked

2 TB. olive oil

1 pkg. turkey kielbasa, sliced

1 tsp. garlic powder

2 cans diced tomatoes, undrained

1/4 tsp. salt

1/2 C. chicken broth

2 cups frozen mixed veggies

  1. Heat a large pot of lightly salted water to boiling.  Add pasta and cook as per package directions.  Drain.
  2. Meanwhile, heat oil in a large skillet over medium heat.  Add kielbasa and cook three minutes, until lightly browned.  Scoop out and place on a paper towel to drain.
  3. Stir in tomatoes, salt and garlic.  Cook for two minutes.  Stir in chicken broth, veggies and browned sausage.  Heat through.
  4. Place cooked pasta in a large bowl.  Add sausage mixture.  Serve warm with parmesan cheese if desired.
