Our menu plan is simple this week, because again I am not interested in making my house hot by turning on the oven!
Sunday: Spaghetti Dinner w/Young Lives
Monday: Pork BBQ on whole wheat buns, cole slaw
Tuesday: Mexican Pizzas, beans and rice (recipe below)
Wednesday: Lentil Stew, cornbread
Thursday: Grilled Cheese, tomato soup
Friday: Pork Cutlets, baked sweet potatos
Saturday: amusement park with kids
Recipe for Mexican Pizzas:
6 whole wheat tortillas
2 cans organic navy or great northern beans
1 pkg taco seasoning mix
2 C. shredded cheddar and mozzerella cheese (I grate my own)
1 small can black olives
guacamole
salsa
- Spray a cookie sheet with no stick cooking spray. Place tortilla on cookie sheet.
- Blend or puree the beans in a food processor or blender. Add seasoning mix packet and mix well.
- Spread bean mixture on top of tortilla. Top with cheese and black olives.
- Cook under broiler in oven until cheese is melted and edges of tortilla are browned.
- Top with guacamole and salsa and serve.

Everything sounds great! Another great way to keep your kitchen cool and not use the stove is to use your slow cooker. The possibilities are endless!
